Ingredients
1 tbsp. olive oil
1 lb. Italian sausage (raw)
3 cloves garlic, finely chopped
3 cups cooked cannellini beans, drained (reserve 1/2 cup liquid)
2 cups baby spinach
2 cups canned diced tomatoes
1 tsp. dried oregano
1 tsp. dried basil
1/4 tsp. sea salt or Himalayan salt
1/2 tsp. ground black pepper
Preparation
Preheat oven to 450 degrees.
Heat oil in a cast-iron (or oven-safe) skillet over medium-high.
Add Italian sausage, cook, breaking it up with a wooden spoon or meat masher
Add garlic and cook, stirring frequently, for 1 minute or until fragrant. Add beans, reserved liquid, spinach, tomatoes, oregano, basil, salt, and pepper. Bring to a gentle boil.
Transfer skillet to oven. Bake for 10 to 12 minutes.
Recipe Note:
To make this recipe vegan, use vegan Italian Sausage.
